Ingredients:
-400 g (3 cups) of “00” flour
-3 medium eggs
-80 g (1/3 cup) of unsalted butter
-40 g (2 3/4 tablespoons) of granulated sugar
-2 tablespoons of aniseed liquor (the authentic Italian recipe wants aniseed but you can substitute it with orange liquor, Rum or Limoncello)

-zest of 1 orange
-1/2 teaspoon of baking powder

INGREDIENTS
200 gr. milk
200 gr. orange juice
200 gr. olive oil
200 gr. powdered sugar
2 eggs
1.300 gr. flour
zest of 1 orange
1½ tsp baking soda
oil for frying

DIRECTIONS 1/2
First we prepare the syrup to cool. In a pot put the sugar with the water and boil for 2 minutes, counting from the boiling point. Remove from the heat and let it cool completely.
Next we prepare the dough for the dibles. In a large bowl beat the milk, orange juice, olive oil and powdered sugar. Add the eggs, flour and zest together with the soda. Knead until we get an elastic dough. Cover and leave the dough to rest for about 30 minutes.

DIRECTIONS 2/2
Divide the dough into balls. Roll out with a rolling pin into a very thin sheet, about 3 mm thick.
Cut the dough into strips with a knife and deep fry them in hot oil over medium heat. With a slotted spoon and a fork, fold the edges inwards during frying, to make rolls.
Remove diples and lay them in a paper towel so as to drain the excess oil. When drained, dip them in the cold syrup and serve on a platter. Pour over with honey and sprinkle with chopped walnuts.

1. Whisk the egg whites with the electric mixer until the mixture is very thick and glossy.
2. Add the egg yolks one at a time while mixing. Mix orange and lemon juice with soda in a cup and add to the mixture, then add white wine vinegar and sugar and mix again.
3. Pour the mixture in a large bowl, add the flour and oil until it is not sticky.
4. Separate de dough in 4 pieces, cover with plastic wrap and leave it to rest for 30 minutes.
5. Roll out each part of the dough into thing rectangle sheets. Cut smaller rectangles, fold and fry them in olive oil.
6. Warm up honey, drizzle the diples and garnish with chopped walnuts.

Instructions
1.Start by combining the lemon and orange zest, salt and Reisling with the olive oil and anise seeds.
2.Stir in the flour and cinnamon and knead until you get a nice smooth dough. Roll it out to 1/8 inch thickness and cut into 2 x 2 inch squares.
3. Take two opposite corners and press them together in the center. (they will stick better with a bit of water on the join.)
4. Heat the coconut oil and add the formed pestiños and all them to float to the surface. 5. Flip them when they turn golden brown.
6. Remove to paper towels to drain and toss in
cinnamon sugar.

1- Put flour in a bowl and add baking powder, vanilla and mix them very well.
2- Make a hole in the middle of the mixture and put yoghurt, egg, sugar, butter, honey and knead it. Cover the bowl with plastic wrap and wait for about 30 minutes.
3-Then, put chrushed walnut and knead the dough again.
4- Shape the dough as balls and put them on the baking tray and brush egg yolk on the dough balls.
5- Mix honey and walnut in a cup and put the mixture on the balls. Bake it in 180 degrees about 30 minutes. It is better to check till it turns to golden brown. Serve Ballı Çörek with milk or tea. Enjoy it :)

Steps to Make it:
1. To prepare the crust, first sift the flour and salt.
2. Cut the butter into tiny pieces and rub with fingertips until mixture resembles fine crumbs.
3. Gradually add just enough water to make the dough hold together in a soft ball, about 2 tablespoons. Cover and rest for 30 minutes.
4. Heat the oven to 180°C.
5. Press the dough into the sides and bottom of a 25cm pie dish and place in the oven for 10 minutes.
6. In the meantime, make the filling: Mix together the cheese, eggs, 1 teaspoon of cinnamon and the honey. Blend well together.
7. Take out the empty baked shell from the oven and allow to cool.
8. Turn the oven to 200°C.
9. Pour the cheese mixture gently into the baked case and place in the oven for 15 minutes.
10. Reduce to 170°C and bake for an additional 30 minutes until set.
11. Remove the dish from the oven and allow to cool.
12. When completely cool, sprinkle the melopita with cinnamon, honey and caramelised nuts.
13. Serve, cut in wedges

Frangollo is one of the Canarian desserts par excellence, more so on the island of Tenerife. Milk, cornmeal, lemon, eggs, sugar, butter, raisins, almonds and cinnamon are fundamental ingredients, although there are areas of the archipelago where it is made with water instead of milk and others ingredients such as matalaúva (anise), are added. Good any time, but with the flavours of the dried fruits and liqueur, this is perfect for the Christmas season.

Marinate the raisins in liquor - like Ron Miel (honey rum) - or water until you need them.
Peel the almonds, roast them in the oven until they are golden brown, then grind them.
Put the milk in a pan with the cinnamon stick and the lemon peel and heat until it starts to boil. Remove the cinnamon stick and the lemon and add the Frangollo (cornmeal) and stir vigorously so that there are no lumps. Add the butter and sugar and stir until it starts to boil again, once it has boiled, lower the heat to a minimum. Leave it until it forms like a thick cream (approx 25-30 min), stirring from time to time to avoid sticking.

Remove from the heat, allow to cool slightly, add the two egg yolks and beat quickly so that they do not curdle with the heat.
Strain raisins to remove excess water or liquor and add them along with the ground almonds.
Stir well and serve in individual bowls, it is usually finished with a little honey or Miel de Palma, although it is optional. It can be eaten either hot and cold.

1º Mix the flour, baking powder, baking soda, sugar and nutmeg, walnut powder and cinnamon.
2º Add the oil, orange juice and mataxa or cognac. Knead to obtain a consistent paste.
Give it the shape of mustachones, that is,
as if it were an egg that is cut in half vertically.
3º Place on a plate greased with oil and bake. Prepare the syrup by mixing all its ingredients. Boil them for 3 minutes. Remove the macaroons from the oven, Let them cool and soak them in the syrup.

Pre-heat oven to 350 degrees
Grease a tube pan (or cake/bundt pan) with butter
In a large bowl, whisk the oil and honey until it comes together
Next add your eggs to this mixture, one at a time until they are all mixed in
Beat in your yogurt and vanilla until it is well incorporated
In a separate bowl mix your flour, baking powder and salt together
Add this flour mixture to your wet ingredients and mix until it all comes together and becomes a somewhat of a smooth batter
Carefully pour your batter into your prepared cake pan
Bake for 30-40 minutes or until a cake tester comes out clean
Once it is finished baking, remove from the oven and let rest for 20 minutes in the pan
After 20 minutes, flip it out of the pan and let it cool on a cooling rack for another 20 minutes
Top with powdered sugar and enjoy
