When we talk about Niğde, we should also mention about local delicacies. It features many delicious meals from sac kavurma (diced lamb fried on iron plate) to Niğde tava, from ezogelin soup to kabak dolması, pita bread, arabaşı soup, noodles, milky soup, meat dishes, yoghurt soup, oğma soup, papara, green beans with egg, kaygana, apricots stuffed witt kaymak, red beet soup, musakka, tirit, ditme, tandır, and öfeleme soup are among the famous dishes of Niğde.

Turkey is the leader in the production of Prunus armeniaca also known as Apricots or in Turkey Kayısı. Kayısı is a gorgeous fruit that can be used in pilavs, making pies, tarts, jams, and preserves. One of my favorites for using apricots is Kaymaklı Kayısı Tatlısı or Apricots Stuffed with Kaymak. If you are serving a heavy meal, this dessert could be served as a perfect ending to your meal. It is light, not too sweet and makes for a fabulous presentation. Hope you enjoy it! Afiyet olsun!

Pumpkin Seed
Considering that Niğde meets 34% of the appetizer pumpkin production of Turkey, it will impossible to think that pumpkin seeds are not famous in Niğde. These seeds are flavored with dry roasting or wet roasting technique in the city and presented as salted or unsalted to the appetizer lovers' taste. When pumpkin seeds are flavored with the "roasting in milk" method, also known as wet roasting, it attracts great attention of tourists and lovers of pumpkin seeds.
