












Then she met the students of 2nd grade. They had just cut the new year's pie, "Vasilopita" for health and good luck and were enjoying their delicious slice in the school yard. Elena ate with them and then told them that she would like to try traditional recipes from their hometown.




















All the walls, in the corridor and classrooms, were painted! "Wow! It's so beautiful!", she thought.


























🔹 5 kilos of sugar
🔹 6 kilos of water
🔹 1.5 kg corn flour (starch)
🔹 400 gr. blanched almonds
🔹 goat and sheep butter of Tyrnavos.
To make the halva you need a bakiri (copper) pot.
🔸Mix all the ingredients together in the pot and stir constantly until it thickens and caramelizes.
🔸When it thickens, remove it from the heat and turn it upside down in the pot, like an omelete.
🔸Then pour it into a round, low pan.
It is eaten hot and cold.

They all ate the pie together. It was delicious!











Then Elena wrote the recipe...


· 2 packs country leaf
· 1/2 cup olive oil for the leaves
🔹For the filling
· 3 ½ cups fresh milk
· 1/2 cup olive oil·salt-Pepper
· 200 gr. cephalograviera
· 6-4 eggs
· 600 gr. feta cheese of Tyrnavos
🔹Preparation for the cheesepie
We will use a shallow pie pan, 40 or 42 cm and bake on the bottom rack of the oven. Grease the pan and preheat the oven to 180°C on the resistances.
🔸Turn the edges of the sheets inward and cover the cheesepie with the last 3 sheets
🔸Pierce the surface with a fork, without reaching the base. Pour over the remaining milk-egg mixture and sprinkle with the remaining olive oil. 🔸Bake for about 1 hour/10 minutes, until well browned on top and bottom.


Teacher Christos and his students had brought with them the ingredients to wrap pork souvlaki in pies.
It is the most popular Greek food throughout Greece and the rest of Europe.
From the day before, some kind parents had prepared the pies and souvlaki at their house.







160 ml milk at room temperature
80 ml of water, at room temperature
1 teaspoon of sugar
2 tablespoons of olive oil
2 teaspoons of dry yeast
320 gr. hard flour
1 teaspoon of salt
1 tablespoon of olive oil, for frying
salt
pepper
Knead until the mixture comes away from our hands (we may need to help by flouring our hands). Put the dough in a large bowl with a little oil and cover it with a wrap. Let it rise until it doubles in size.
*Of course you will find them in a store with Greek products



Recipe to make souvlakia
🔸500 gr. pork neck
For marinating
🔹 40 gr. vinegar, from white wine
🔹 2 teaspoons of salt, 1 teaspoon pepper
🔹 2-3 tbsp olive oil
🔹 1 tbsp oregano dried
* We pass the pieces of meat one by one on wooden skewers, leaving small spaces between the pieces so that they cook well. Bake in a griddle pan or on the coals. Sprinkle the souvlakia with 1 tbsp. olive oil.

Elena entered the building and met the first graders with their teacher Erasmia. They were cooking traditional "mustokulura". She cooked with them and took lots of pictures! After tasting the "moustοkulura", Elena wrote the recipe.











🔸 500ml mustos*
🔸500ml olive oil mixed with seed oil
🔸250g sugar
🔸2 teaspoons of baking powder
🔸1 teaspoon of baking soda
🔸1&1/2 teaspoon cinnamon powder
🔸1&1/2 teaspoon clove powder
🔸1/2 cup cognac
🔸About 1&1/2 pounds all-purpose flour (may need more, as needed)
You will need a sieve and parchment paper.
* Μustos is the juice produced by crushing (pressing) the grapes.




Elena had a great time with the children in Damasi! When she left, the rain had stopped. She took a taxi and went to the nearby city of Larissa to rest.









The next morning she walked through the city of Larissa and admired the sights. She was impressed by the ancient theater! What a beautiful city!


After a while she heard children's voices and when she got closer, she realized that she had arrived at another school. It was the 18th Primary School of Larissa.



Elena entered the building and met the 4th graders with their teachers Thomie, Vasiliki and Elli. They were cooking traditional Trahanas. She cooked with them and took lots of pictures. Before she leave, she wrote the recipe.





Traxanas - recipe
Ingredients:
1 pint. of Trahana sour flour tea
water, a little olive oil, a little salt
some grated feta (cheese).
In a saucepan over high heat, heat the olive oil and lightly sauté the trachana, stirring so that it is well oiled. Add the water and a little salt.
When it boils, stir, lower the heat and simmer for 10 - 15 minutes or until the soup thickens. When serving, add a little grated cheese on top.













When Elena's plane was landing, first all she could see was green and blue: Finland seemed to be full of forests and lakes! She was amazed how beautiful it was!
I'm so hungry!
When Elena arrived in the town called Nokia, she walked straight to Nokia school, as she had heard that they can cook delicious pea soup there! After travelling all the way from Greece, she was sooooo hungry!







Luckily it was Thursday when she arrived at Nokia School.... for some weird reason peasoup and Thursday belong together in Finland!
Pea soup - recipe
Ingredients:
2.5 l of water, 500 g of dried peas, 500 g of minced meat,
2 bouillon cubes, spices to your taste.
1. Rinse the peas. Soak the peas in water overnight. 2. Boil the peas in their soaking water. Let it boil on low heat for 2-3 hours. Remember to stir every now and then. 3. Fry the minced meat and add to the pot. 4. Season the soup to your taste. 5. Let the soup boil for a while before serving and if necessary, add water if it is too thick. Check the taste. 6. Serve with mustard.
And for dessert: Of course, pancake!





The Best Pancake in the World
Ingredients: 4 dl wheat flour, 1 ½ dl sugar, 1 teaspoon of baking powder, 1 teaspoon of salt, 1 teaspoon of vanilla sugar, 8 dl of milk, 2 eggs, 100 g of melted margarine
1. Melt the margarine 2. Mix the dry ingredients together 3. Add milk, eggs and melted, cooled margarine 4. Mix until the mixture is smooth. Pour the dough onto baking paper on a baking tray and bake at 200-225 degrees for approx. ½ hour. 5. Serve with strawberry jam (and whipped cream) Yummy!
So easy, so delicious!!!

Elena spent her first night in Finland at Eden Spa Hotel. There she enjoyed sauna, swimming and a good night sleep. In the morning she was surprised to see another school from the hotel window: Vihola school was so near! She decided to visit it straight away! She was warmly welcomed by Vihola students, parents and teachers! Later she enjoyed a plate full of hot creamy salmon soup at the school canteen. Yummy! A nice girl, whose name was Lahja, told Elena that she and her mom were going to cook a fishless version of this traditional soup at home, and they invited Elena to join them.

And the ingredients:
6 potatoes
4 carrots
2–2.5 dl (oat) cream
1 tablespoon of vegetable oil
fresh dill
salt
water




And before Elena said bye-bye to her Finnish friends, she had a cup of Finnish coffee and traditional biscuits baked by teacher Harri's students. Yummy!

Herrasväen pikkuleivät - Recipe
(1 teaspoon vanillin sugar), approx. 2 dl lacquer or raspberry jam, (powdered sugar).
1. Mix the sugar into the soft fat.2. Combine the dry ingredients and add into the dough.3. Mix the dough until smooth and let it rest in the refrigerator for about 30 min.4. Roll out the dough on a floured board until thin. Use a round mold or a small glass (diameter about 4 cm) to make round cookies from the dough.5. Bake in a 175-degree oven for about 10 minutes. Cool the cookies.6. Spread the jam on the cookie and press the two cookies against each other. If desired, sprinkle powdered sugar on the cookies before serving.



On the way to the hotel, Elena took a taxi. The taxi driver was very friendly and told her about how much he missed his beautiful country, by the sea, PORTUGAL.
Elena had already heard of a town in Portugal called Vialonga. Her Greek and Finnish friends had a project in common with a Portuguese school. Elena didn't hesitate to travel there.

When Elena got there, she walked for a while and reached a primary school. It was the 3rd Primary School of Vialonga. Children were dressed up and playing! It was the Carnival party. The children were supposed to parade through the streets, but it was raining a lot! So they played in the gym and the curious girl joined them!












When Elena left she walked through a beautiful park and it started to rain, so Elena rushed and saw another school.

It was Vialonga's school cluster. A basic and secondary school.
Elena quickly went inside...it was raining heavily!





She had a warm welcome from the 6F class and their teacher Cláudia. Elena arrived at the right time...



The class was about to bake the famous Pastéis de Nata (custard tarts). Elena baked with the children!



It was super fun and in the end, she tasted a delicious tart and a hot lemon-scented verbena tea. Then she wrote down the recipe to share with her friends.




Ingredients:
PUFF PASTRY
0,5 KG CASTER SUGAR
250ml WATER
1 CINNAMON STICK
1 LEMON ZEST
100ml MILK
75g PLAIN FLOUR
5g FINE SALT
400ml BOILING MILK
1 EGG
7 YOLKS
Preparation:
Mix the water, sugar, cinnamon and lemon and boil for2 minutes
Then mix the flour, salt and milk and whisk well till no lumps.
Then mix the boiled milk and whisk well till tick, mix the sugar syrup and let it cool down. At the end mix the eggs and yolks, mix well and pass to a sieve and place in the moulds lined with the puff pastry. Bake until golden brown.

After, Elena and her new friends went to the playground to play and relax until lunchtime.

Before she left, Elena had lunch with the class in the school canteen. She learned how to cook a delicious traditional dessert, Arroz Doce (Rice pudding)! Elena is a sweet tooth so she loved the rice pudding and wrote down the recipe.






Ingredients:
100g rice
250ml water
a pinch of salt
0,5ml semi-skimmed milk
lemon zest
1 cinnamon stick
ground cinnamon for garnish.
Preparation:
To prepare this rice pudding, pour the water into a saucepan, add the pinch of salt, lemon peel and cinnamon stick, bring to a boil and let it start boiling. Add the rice and cook, stirring occasionally, until it almost runs out of water. Heat the milk in a separate saucepan. Then add the milk to the rice pan, little by little and stirring occasionally, and cook the rice until soft and very creamy. Then add the sugar, with the heat off. Garnish with ground cinnamon.

Elena set off on a new adventure! On her way back, Elena walked by the River Tagus and saw many bird species! Elena now realized why the taxi driver missed his country so much...





As Elena was very close to Spain, she couldn't miss to visit the country. She decided to travel by train and enjoy the views near the sea. She visited Barcelona, the capital of Catalonia, and she took photos of the famous Sagrada Família.

Then, she continued her journey to Lleida. She got a bus to see the little villages, the farms and the countryside of this region. She stopped in a very small village called Torregrossa. She wanted to walk a little bit and enjoy the nice weather.

Suddently, she smelled food and remembered that it was time for lunch! A very nice girl, called Mariona, was cooking "Calçots" (a type of onion) and her friends, Alba and Aitor, were cooking snails. Elena thought that it was a strange dish...but she had to try it!




Mariona showed how to eat the "calçots". First, peel it, after deep it in a special sauce and eat it. Elena thought that it was fun. She wanted to add this sauce to her recipe book.
Ingredients for 4 people:
1 ñora (or 1 chorizo pepper)
4 ripe tomatoes
1 head of garlic
1 glass of olive oil
150 grams of almonds
1 slice of stale bread (or fried bread)
water overnight before making it, so that it
softens. Then you can mix all the ingredients
together in a blender.





Alba was cooking the snails in a pan, but Aitor said that the typical snails in our region are made in a tin tray and eaten with "allioli" sauce, so Elena tried them both!
Alba also prepared a little bit of "pa amb tomata" (bread with tomato) and some cold meat to accompany the dish.
Elena loved the bread with tomato and the "allioli" sauce and wanted to keep the recipes. Other typical dishes also need "allioli" sauce, so it's important to have the instructions.

PA AMB TOMATA (bread with tomato)
Cut the bread in slices and scrub a tomato cut in half on it.
ALLIOLI (recipe with blender)
Ingredients: two cloves of garlic, one egg, olive or sunflower oil and salt.
We put the garlic and the egg in the blender and beat and pour slowly the oil until smooth. If we do it with olive oil, the flavor will be much more intense, so it is advisable to use a mild variety. The egg changes the texture of the sauce, resulting in a creamier aioli than the one made by hand with the mortar.






Wow! They had a great lunc! After, Alba, Mariona and Aitor took Elena to school. Alba was in 5th grade and Aitor in 6th grade. That day, they had a bike excursion with all their classmates. They were going to cook Coca de Forner (sweet bread).










They learned all the process and cooked it in a traditional way, in a wood oven.
All children ate the sweet bread with chocolate as an afternoon snack. Deliciouuuuus!
Elena remembered the recipe because it was really easy!

Put flour in a bowl or in a clean flat table. Make a dimple. Put the yeast, water, oil and salt in the middle. Knead for 10 min with your hands. Leave to rise for 30 minutes or more. Give a rectangular shape. Leave to rest again for about 30 minutes. Flatten it making a rectangular shape. Pour oil, a lot of anisette and sugar on the dough. Bake in the oven for 15 minutes at 230°C
Spanish - Recipe
Ingredients:
- 500g flour
- 300ml water
- 10g salt
- 12g yeast
-35ml oil
- sugar
- anisette
Sweden
After visiting Spain, Elena really missed the cool weather in the North of Europe. She decided to take a trip back to the North, but this time she decided to visit another country, Sweden!


Elena remembered how beautiful it was in Finland with all of the forests and lakes. She was reminded of this beautiful landscape as she landed in Sweden.
She saw many lakes and many forests, but she also saw many mountains!

Two students named Engla and Emilia invited Elena to eat Swedish Meatballs with them. Elena was so excited to meet Engla and Emila. And, of course, she was so excited to try the meatballs too!



















Do this:
Mix milk and breadcrumbs. Let swell for 10 minutes. Add minced meat, onion, egg, salt, to the breadcrumb mixture. Work the minced meat together properly.
Wet your hands with cold water and form meatballs. Fry a few at a time in cooking fat, shaking the pan from time to time so that the meatballs roll around and stay round. You can also use a spatula to scrape the meatballs from the pan when they stick.

Poland


It's been a fantastic day today! We have hosted a special guest who has been travelling for many days. She started in Greece and has already been to several countries. Today she is in Poland visiting our small school.
It seems that she has an excellent timing because the whole school community have been celebrating Fat Thursday and we have prepared a lot of food. Elena tasted it and wanted some recipies.





Everything is so delicious! And many of them were made by the students themselves.
Elena's most favourite treat was angel wings in Polish called Faworki or Chrust. Yes, it's quite difficult to pronouce - ch is pronounced like h in a word honey ;)
Chrust is dry crispy cakes in a form of a bow and they are very popular in Poland especially on Fat Thursday which marks the last Thursday before Lent.

2 cups flour
Instructions
Make dough by combining flour, sugar, egg yolks, cream and salt. Use a little more cream if necessary. Roll out the dough as thin as possible and cut into 10 x 3 cm strips, cutting a slit in the middle of each strip. Pull one end through the slit, to create a twisted appearance. Heat lard to 180 degress C. Fry in batches, turning to cook both sides, until golden brown. Drain on paper towels. Roll in powdered sugar. Bon appetit!

Slovenia
After visiting Poland, Elena missed Greece and its sun! So he decided to return. But at the airport Lea was met by a sweet teacher from Slovenia. When Elena told her the reason for her travels, Lea invited her for a last stopover in Slovenia, to see their beautiful school.

In the afternoon, Lea hosted Elena in her warm home! It was the last day of her long journey, as the next afternoon she would return to Greece from where she had started.

ŠMORN
It's a kind of thick pancakes, which you bake in the oven.
INGREDIENTS:
• 4 eggs
• 4 table spoons of sugar
• 4 tablespoons of milk
• 4 tablespoons of flour
• 4 tablespoons of oil
• 3 tablespoons of raisins
• ¼ tablespoon of baking soda or baking powder
• 1 pinch of salt
During her flight she was thinking about all the beautiful Hometowns and schools she had visited, the people she met and the food she tasted. Her long journey was truly wonderful, providing her with knowledge, unforgettable experiences and unique memories!
