Tarhana is one of the oldest traditional fermented foods in Turkish cuisine.It has a sour taste and strong aroma. Because it can be stored for a long time, people in Anatolia have used it for centuries.
Preparation: Yogurt, flour, vegetables (like tomato, pepper, onion), and spices are mixed and kneaded. Then fermentation happens, the mixture is dried, and ground into powder(picture 1).
Use: Mostly cooked as soup in winter. It is boiled with water or broth to make a nutritious and filling dish.
