MENEMEN (TURKISH SCRAMBLED EGGS)
Menemen is the classical breakfast of Turkiye. It is famous in Samsun, Turkiye. It is called Çakallı Menemen there. It is a dish of scrambled-style eggs gently cooked in a rich, simmering sauce of tomatoes, green peppers, and spices. It is traditionally scooped up directly from the pan using fresh bread.

Salt
- Cut the green pepper and grate the tomatoes.
- Heat the oil and butter in the pan.
- Add the peppers and onion, and saute them.
- After it is browned, add grated tomatoes.
- Cook it until tomatoes are cooked well.
- Sprinkle salt, red pepper flakes, black pepper
- Crack the eggs and add them into the pan.
- Stir gently until eggs are just barely set
- Serve hot.

MATERIALS
1- Potatoes, 2-Aubergine, 3-Pepper, 4-Strained yoghurt , 5-Garlic, 6- Cooking oil,7-Chili pepper , 8-Salt
HOW TO MAKE IT
1- Preparing the Vegetables: Peel the eggplants partially, dice them, and soak them in salted water for 15-20 minutes to remove the bitterness.2- Dice the potatoes and peppers. Dry the eggplants thoroughly.3- Frying: Fry the potatoes first, then the eggplants and peppers in hot oil until they change color.4- Draining the Oil: Remove the fried vegetables to a plate lined with paper towels to drain excess oil.5- Yogurt Sauce: Crush the garlic and mix it with yogurt and salt.6- Assembling: Place the vegetables on a serving plate. Drizzle the prepared garlic yogurt sauce over them.7- Serving: Pour the hot oil with chili flakes (heated in a pan) over the yogurt and serve.
Testi Kebab

Testi Kebab is a traditional Turkish dish form the Cappadocia region. It is cooked inside a clay pot called a ''testi''. According to local tradition ,people used clay pots to cook meat and vegetables slowy over fire,making the food more delicious and tnder.Before serving,the clay pot is carefully broken open,creating a special presentation.

1.Cut the meat into small cubes.

3. Take a small piece of dough, flatten it, and put some filling inside.
4. Close the dough and shape it into small balls.
5. Boil the balls in water until they are cooked.

Kayseri Yağlaması
Kayseri yağlaması is a traditional Turkish dish from the city of Kayseri. It consists of thin layers of flatbread and minced meat. It is usually served with yoghurt.

300g minced beef

2 tomatoes
2 tablespoon oil

Preparation
Mix flour, water, and salt to make a soft dough.
Divide the dough into the small balls.
Cook the flatbreads and add the minced beef, pepper, tomatoes.
Cook until browned.
Place a flatbread on a serving plate.
Repeat the layers until all of them used ans serve it hot with yoghurt.
