Easter Mazurek- a traditional Polish EASTER PASTRY by Przedszkole Układanka w Świętej Katarzynie/ POLAND
400 g wheat flour e.g. type. 500 - 2.5 cups
200 g butter - 1 classic cube
100 g icing sugar - about half a cup
2 tablespoons 18 % sour cream - up to 50 g
2 egg yolks - up to 40 g
Other ingredients
1 tin of kajmak (caché mass) - 460 g
small jar of Nutella or similar cream - 350 g
1 70 % dark chocolate bar - 100 g
100 g roasted hazelnuts
optional extras: chocolate eggs; flaked almonds; sugar-coated eggs

TYPICAL EASTER RECIPE IN LATVIA – Zemite primary school MELLEŅU KŪKA - BLUEBERRY CAKE
Ingredients for dough
• 6 eggs
• 6 tablespoons of sugar
• 6 tbsp flour
• a pinch of salt
blueberry jam for spreading



Preparation 40 min
⦁ Separate egg yolks from whites.
⦁ Beat the yolks with sugar (as many yolks, as many tablespoons of sugar), beat the whites separately to beat better, add a little salt.
⦁ To the beaten egg yolks, add as many tablespoons of flour as there are yolks, mix thoroughly so that the mass is uniform, then carefully fold in the beaten egg whites.
⦁ Pour into a greased mold and bake.
⦁ Bake at 150-180*C for about half an hour
⦁ Spread jam on top of the finished cake

ZIRŅI AR SPEĶI - PEAS WITH BACON
Ingredients (4 portions)
• 500 g of gray peas
• 200 g of dried bacon
• 1 large onion
• Salt

Preparation 45 min
1. The peas are soaked, boiled soft, drained, sprinkled with salt and mixed into the peas by shaking.
2. Cut the bacon into small pieces, chop the onion.
3. Fry the lard, letting the fat drain, add the onion, fry everything.
4. Place the peas in a bowl, cover with fried bacon and onions.
